It’s SUMMER! The season has finally arrived. Time for sunshine, warm temps, and fun new cocktails! How about a beer cocktail? I know, at first I was like, WHAT?! However, they do exist and they can be fantastic when done properly.
I saw a post from Lawson’s Finest Liquids on Instagram for this particular recipe. I mean, I love their beer Sip of Sunshine, so how could this be bad? They made what they called a Sip 75, a variation of the classic gin cocktail French 75.
The standard French 75 calls for gin, lemon juice, simple syrup and champagne (or sparkling wine). This fun twist subs out the champagne for beer, which gives it a tangy bitterness that works well with the lemon and gin.
I made it the exact way they did for the first try and it was fantastic. Being an adventurer, I always try things with a few variations just to see the difference. This one I only made twice because the second one came out exactly the way I wanted, so why mess with perfection.
For gin choice, Lawson’s used Barr Hill. They are in the same area as the brewery, so it was a natural choice for them plus the gin is delicious. I chose to use my favorite, Drumshanbo Gunpowder Irish Gin, just because I love the botanical flavors.
Their recipe called for just a half ounce of lemon juice which I did the first time, the second try I used a smidge more and it made the drink that much better. The lemon juice plays so well with the beer, it’s a match made in heaven. Follow the sunshine my friends…you’ll be in for a treat!
1 1/2 ounces of gin
3/4-1 ounce fresh lemon juice
1/2 ounce simple syrup
Lawson’s Sip of Sunshine IPA
Fresh lemon to garnish
Combine the gin, lemon juice, and simple syrup in a shaker. Add ice and shake or 20 seconds.
Double strain the mix into a champagne flute, or glass of your choice.
Top with the Sip of Sunshine. Give it a little stir. Garnish with a lemon wheel or lemon zest. Enjoy in brilliant sunshine. Cheers!
